Opening a bakery and pastry shop without an exhaust flue? A technical guide to making it possible.

The main challenge when choosing premises for a bakery or pastry production facility is often the absence of an exhaust flue extending to the roof. In the bakery and pastry sector, this limitation can be overcome by using condensation hoods, which capture the steam produced during baking.

This system is particularly important in breadmaking, where steam is used to improve the crust. It also prevents moisture from building up on ceilings, walls and display cases, reducing the risk of mould and deterioration.

WHY IS IT THE PERFECT SOLUTION FOR A BAKERY OR PASTRY SHOP?

1. Steam management: the bread’s “sweat”

In baking, the main by-product is the water vapour released by the dough during baking, as well as the steam injected into the oven to produce bread with a crisp crust.

  • The system cools the steam and converts it back into water through condensation.
  • It prevents moisture, mould and condensation from forming on walls, ceilings and windows.

2. “Pleasant” aromas

Unlike a deep fryer or a meat griddle, bakery aromas—such as vanilla, sugar and freshly baked bread—are not generally considered unpleasant pollutants under most regulations.

  • As no animal fats are being burned, the process does not produce black smoke or persistent odours requiring expensive electrostatic filters.

3. Savings on building work

Since there is no need to install extraction ducts all the way to the roof—which may be impossible in some buildings or cost thousands of euros—you can set up your production facility in almost any standard commercial unit.

THE “SMALL PRINT” YOU NEED TO KNOW

Before purchasing your equipment, there are three technical requirements your premises must meet for the system to operate legally and effectively.

1. Electric ovens only

This is the golden rule. Gas ovens produce combustion gases that must legally be discharged outdoors. Therefore, premises without an exhaust flue must use 100% electric ovens.

2. Water supply and drainage connection

Remember that a condensation hood produces water. You will need a drainage connection at the point where the oven is installed. Some models also require a cold-water supply to assist with the steam-cooling process.

3. The menu: dough products yes, fatty foods no

A bakery oven with a steam condenser is ideal for bread, croissants, savoury pastries and confectionery.

However, caution is required: using it to cook foods that release grease—such as bacon for fillings or roasted meats—can quickly clog the condensation filters. It may also create persistent fried-food odours that the condenser cannot remove.
