What did I need?

In a setting where every recipe demands maximum precision and care, working with equipment that doesn’t offer stability can become a real challenge. According to José Ruiz, co-founder of the project, one of the main issues they faced was the difficulty in maintaining consistent temperature and humidity in their previous rotary ovens. Since gluten-free products are far more delicate than conventional ones, this directly affected the final quality, making it hard to achieve a consistent and satisfactory result.

What solution did Salva give you?

Everything changed with the introduction of the Sirocco oven from Salva. Since then, day-to-day operations in the workshop have become more efficient and reliable. “It’s much more practical,” says José Ruiz, highlighting the uniformity of the baking — something essential for their product line. Additionally, the dimensions of the Sirocco rotary oven fitted perfectly into their workspace, allowing them to optimise production without major renovations. But above all, they value the functionality and precision it provides: a rotary oven that reliably meets the demands of such a sensitive product.

We chose the Sirocco rotary oven because of the volume of work we needed to handle and the space available in our workshop. However, what ultimately convinced us to go with the Sirocco was the improvement in baking consistency.
