What did I need?

We needed a solution that would allow us to work with gluten-free doughs with maximum precision and stability, since these types of products require much stricter control during fermentation, baking, and handling. The goal was to achieve products with the same texture, flavor, and quality as traditional bakery products, without the consumer noticing the difference.

What solution did Salva give you?

Salva provided us with a comprehensive solution in gluten-free bakery equipment, allowing us to optimize every stage of the production process. Thanks to the Sirocco rotary oven, we achieved uniform and stable baking, essential for producing gluten-free bread with improved texture, volume, and quality. The Modular deck oven gave us greater precision and versatility for different artisan products, while the FC controlled prover ensured exact temperature and humidity control, which is key in the fermentation of gluten-free doughs. With this technology, we were able to improve efficiency, increase production capacity, and offer high-quality gluten-free products that preserve the flavor and experience of traditional bakery products.
